YIKES!

I know, I know...it's been AGES since I've written! My life has changed so much that I could write pages about it, but instead I'll just say "hi" and continue on! :)

It's Halloween weekend and we are excited to dress up as cowboys for the big day! We are heading out to an event tonight which should be filled with fun and then tomorrow it's Trunk or Treat at church. All the kiddos line up and parade around and then go from car/van to car/van and get treats. It's much safer than heading out onto our very dark, non-lit streets here.

Next week we're heading to CA because Mike has Teachers' Conference. K and I are tagging along to enjoy a few days at a beach house and then heading to Legoland for a day. This will be my first time in CA so I'm pretty excited. :)

I was selected by BzzAgent (www.bzzagent.com) to receive a product from Cover Girl and then tell (bzz) other people about it! So, I'm going to bzzz to you...

I got lip gloss and eye shadow from the Cover Girl Blast line. The ShineBlast Lip Gloss is awesome! It has a specially shaped tip to help with applying the gloss. I got many compliments on how shiny my lips looked while wearing it. I will be buying some for sure! (There are 16 different colors to choose from!)

I also received some eye shadow. I don't normally wear eye shadow because for some reason it irritates my eyes, but I did try the Smoky ShadowBlast they sent me. It is soooo cool because it is in a tube so no need for a brush to apply. One end of the tube is used to apply the base color and the other end of the tube is used for liner or in the crease of your eyelid. It is super easy to put on and looks great! (You can find it anywhere Cover Girl is sold!)

Fun website

If you love shoes, then I have the website for you! :) I discovered this site when visiting bzzagent.com. They send out products for people to try and then "bzz" about to others. Bzz agent also has a "frogpond" which highlights different websites. I visited myshoes.com and thought others would enjoy the site as well. Better late than never--Weekly Menu April 18th

I've been a tad disorganized the last week or so, but I do have my menu for the week now. :) I even made up my own recipe on Monday since I had no car and some ingredients to use up.

Sunday--I can't remember what we had...
Monday--Kara Burritos (Burritos with rice, tomato, black beans, green pepper, leftover ground turkey)
Tuesday--Macaroni and Cheese Casserole (AMAZING!) I changed up the recipe a bit by adding a dash of garlic powder and ground mustard.
Wednesday--Buttermilk Pecan Waffles and homestyle potatoes
Thursday--Spinach Salad (from Family Circle) and cheese bread

Saturday--Calzones (cheese for K, pepper and onion for grown-ups)

I have an addiction...

to looking at blogs. :) Blogs about cooking, recipe blogs, decorating blogs, blogs with DIY ideas...I just love browsing and reading blogs! Do you have the same addiction?

I have gotten so many awesome recipes and weekly menu ideas from blogs. I have shared some of those with you in the past. I have also found some great ideas for organization too. And, of course, there are so many great ideas out there for the kids! Here a few of my favorite recent finds..

Check out this amazing crate idea from Blue Cricket Design for keeping your child's school papers neatly organized all in one spot! I have already purchased K's crate and now just need to let him pick out the ribbon. I'll post a picture when it's done. Isn't it a great idea??

Another fabulous idea for keeping the kiddos occupied on road trips was found at Somewhat Simple. I am so excited to start printing things out and filling a book for K. It will be great for our trip to CO this summer!

I tend to stick with the simple ideas, but I really want to try this Clothespin Art Center over at Crafts by Amanda. What an awesome way to share your little one's artwork!

Mike and I have never spent money on a bedroom set since we felt there are many other things we'd rather have. SO, we don't even have a headboard and I guess our room is a bit boring. Well, I hope to liven things up with this super simple headboard! We have some leftover baseboard from redoing the guest room so I'm hoping Mike will have some time to get it cut for me and get the headboard up!

There are so many amazing ideas out there in cyber world and I LOVE finding them! :)

YUM

This morning K, Grandma and I made Deceitfully Healthful Oatmeal Chocolate Chip Muffins which I found on a great blog called "Frugal Homemaking". They were easy to make and taste so good! I am going to freeze half of them for quick breakfasts/snacks later on. I did make a few simple changes to make them even healthier and think the results are rather tasty. :)

1.5 cups oatmeal (I used quick oats.)
2 and 2/3 cups flour (I used 1 cup whole wheat flour and the rest was all-purpose flour.)
2/3 cup sugar
4 tsp. baking powder
1/2 tsp. salt
2 eggs, beaten (I used Egg Beaters egg whites.)
1.5 cups milk
.5 cup vegetable oil (I used canola.)
6 oz. mini-chocolate chips (half of a bag)

Pre-heat oven to 400 degrees. Grease 24 muffin cups. Combine the dry ingredients--oatmeal, flour, sugar, baking powder and salt and create a well in the middle of the mixture. In a separate bowl, mix the wet ingredients--eggs, milk and oil. Add the wet mixture to the dry and stir just until moistened. Add the mini chips until evenly combined. Fill the muffin cups about 2/3 full. Bake for 16-18 minutes, or until tops are light golden. Remove from oven, and allow to cool for 5 minutes before handling.

My mother-in-law is coming tomorrow! I'm looking forward to having her with us for a week. We aren't on break so it'll be a busy week, but it will be fun to have her here. :)

Here's the menu for the week..

Monday--used an Entertainment coupon for Domino's Pizza
Tuesday--Zucchini, Carrot and Black Bean Quesadillas, baked potatoes
Wednesday--Pizza Rolls and cauliflower w/light cheese sauce (new recipes)
Thursday--Creamy Black Bean Salsa Chicken and brown rice
Friday--Eegees on the way to Chorale Fest in Phoenix (with carrots and chips)
Saturday--Absolutely Delicious Turkey Burgers and Tomato-Basil Pasta Salad (new recipe)


Creamy Black Bean Salsa Chicken
2 to 4 boneless, skinless chicken breasts
1 cup chicken broth
1 cup salsa
1 can corn, drained
1 can black beans, drained
1 pkg taco seasoning (I make my own)
1/2 cup sour cream
1 cup grated cheddar cheese

Place chicken in greased crockpot. Pour broth, salsa, corn, beans and taco seasoning over chicken. Cover and cook on low heat 6-8 hours or high heat 3-4 hours. Remove chicken with slotted spoon and place on serving dish. Stir sour cream and cheese into sauce in crockpot, then pour over chicken. Makes 3-5 servings.

Serve with warm tortillas and Spanish rice.

Insomnia

UGH...it's 3 AM and I'm wide awake--again! I hate my sleep patterns lately. I have no trouble falling asleep--often before 10 pm. Then I'm awake before 5:30, which isn't too awful. But, 2:30 AM? That just bites! I'll play on the computer a bit and then crawl into bed and fall back asleep until K wakes us up around 6. I wish I knew why I have these sleep issues. It's very frustrating...

Anyway, yesterday was my birthday and I had a really nice day with my guys. I had a few hours to myself in the morning and then we went to a nearby state park to hike. The wildflowers are in bloom so it was a pretty jaunt. :) I wish we could have stayed longer, but we had a full day of activities planned. After hiking we went to M*mi's Cafe for lunch. The whole restaurant resembles a French bistro so I love it there! Then we ran into the mall for a bit. I ended up buying stuff for K, but nothing for me. We all enjoyed the first "Chipmunks" movie so we went to the cheap theater to see the Squeakel. It was okay. We then went home to dye Easter eggs, give K a haircut and bath and then get him to bed early since it was Day #3 without a nap. (He was asleep by 6:30) Mike made homemade pizza for supper and we watched "The Informant"...interesting movie, I guess...

Speaking of birthdays...did you realize how awesome it is to sign up for restaurant e-clubs? You can really get lots of freebies on your birthday when you do! I think I got around 20 different emails for free dessert or appetizer, free meal, or money-off coupons. It's fun! We used the F*mous D*ave's email for a free rib dinner. I took K out for lunch and used my free dessert at Chili s. (SO YUMMY!) The best part is that you usually have about 2 weeks to use the coupons so you can actually have some time to use more than one, if you want. Just head to the website of your favorite restaurants and sign up for their e-club. It's so worth it!

It's Easter morning! It's so cool to talk with K about Good Friday and Easter. He understands so much better now that he's a year older. He knows that today is a very happy day to celebrate what Jesus has done for us. I LOVE Easter morning services--especially with the trumpet playing. I think singing "I Know That My Redeemer Lives" with the trumpet is the best. It never fails to bring tears to my eyes. What an amazing God we have! Happy Easter!

Relaxation

We are back from a quick jaunt up to Phoenix to really enjoy "Spring Break". While at home Mike was still busy with school stuff and we both were working on home projects so there was not too much relaxing or renewing going on. We went up to Phoenix yesterday and spent some time at Ikea. K had a blast in the supervised Kids' Area while Mike and I got some things to help with organization in the house. (I LOVE that store!!!) We then headed over to a huge park to eat some lunch and hike. Well, that was the plan anyway... It was warm and we ate late and I had not had much to drink all morning so I think that all contributed to me all-of-a-sudden feel horrible and just wanting to lie down on the ground. I drank some water and rested in the car a bit and started to feel better, but Mike didn't think we should try hiking when I had just felt like collapsing. So, we headed to the motel early and got checked in. I got a great deal on a suite in Scottsdale that had a full kitchen and allowed dogs! We were even right by the pool and it included a breakfast the next morning. (We are going to stay there again when we head up to Phoenix in May to spend time with relatives that are coming in from out east.) Mike and K went swimming and I relaxed in the room. The rest of the day was just spent chilling out and enjoying time together.

Today we had breakfast, another swim and then headed back to the park to attempt hiking again. The weather was perfect and we spent about 2 hours hiking, playing and doing a couple of geocaches. We then went to The Container Store and had lunch at Chik-fil-A...YUM!!! Then back to Tucson we went.

I am now enjoying my last moments of "vacation" since tomorrow I must tackle the messy house and hopefully get things back to order in the guest room. Mike did an awesome job putting in a new floor and now just needs to get the baseboards in! Hopefully tomorrow!! I'm so thankful for this past week of a break from the normal routine! :)

I'm slowly getting things organized this week. Tonight I am having a Ziploc House Party! Zipoc sent me a gigantic box of products to share with friends. Unfortunately, not a whole lot of my friends can come since it's spring break, but those that can make it will be getting Ziploc containers, Ziploc memo pads & sharpies, coupons and organizational ideas. I also found lots of great ideas for using Ziploc containers and bags so we'll be talking about those as well. It should be lots of fun!

Spring Break!

Aaahh...a whole week to relax and accomplish things...will it happen? I really hope so! I want us to have fun and spend time as a family this next week, but I'd also love to get some things done around the house.

*Taxes!
*Get the garage back to normal after the water heater fiasco
*Get the extra room/guest room organized and livable after the water heater fiasco
*Organize all my new recipes
*Make all the spice blends and from-scratch sauces I want to try
*Find a new satellite/cable provider and save some money
*Get caught up on TV shows that I haven't watched for weeks

So far the fun things we have planned...
*Book Festival at U of A
*Spring Training game?
*Overnight trip to Phoenix with a visit to Ikea, hiking at Papago Park and fun at Schnepfs Farm

Today Mike is working at school to get lots done so he can be at home most of the break. I actually have off of work during break as well so it's going to feel weird to not be typing every afternoon/evening.

I'll let you know what actually gets accomplished--I really hope it's a lot! We'd love the guest room to be completed for my MIL's visit next month and my parents' visit after that.

Weekly Menu--March 7

I am finally back! My father-in-law went home to be with Jesus on Valentine's Day so we headed up to MN for a bit. When we got home we found our water heater had been leaking for who knows how long and there was a mess to take care. (And still isn't completely taken care of yet.) Then my sister came for a visit. It has been crazy around here and I'm praying things are settling down for a little while now. :) One week until spring break!!!

3:30

That's what time I woke up this morning! It's now 5:30 and I've accomplished a few things that needed to be done on my computer. I will most likely be up for the morning now, but will hopefully crash after lunch!! I get this kind of insomnia every month...my version of PMS. It's weird, but that's how my body works. At least it's only for a few days--and hey!--I got some things done! :)

Mike has a meeting at church all morning so it's just K and me this morning. Hopefully, he's in a good mood and will let me veg today. (It's seriously rare for K NOT to be in a good mood, but he had a sitter last night and didn't fall asleep as well as he normally does so who knows.) I'd like to work on my menu for next week, make some hearts to decorate K's door for Valentine' Day and finalize what we are going to do tomorrow. We went to church on Thursday night so I'd like to head to Phoenix for the day tomorrow, but we'll see...

Last night Mike and I had a date to attend a Valentine's Dinner at church. IT WAS SO MUCH FUN!! We had delicious food, great company, tons of laughs and fun being just "Mike and Kara" instead of "Mike, Kara and Kaleb" for one night. :) Unfortunately, date nights are rare for us so I truly appreciated our time together last night. K enjoys having a sitter, but doesn't always do bedtime very well without us. I assume that will change as he gets older and then maybe Date Nights can be a more regular thing!!

Mike's dad is not doing well. He sleeps a lot, talks very little, and drinks a small amount of water each day. He is also in much pain many nights. Mike has tickets to fly up in two weeks, but Dan may be with Jesus before that. Though it saddens us greatly to think of life here on earth without such a fun-loving, caring, funny, God-fearing, generous man we are comforted with the blessing of an eternity in heaven that awaits Dan. The other day Mike made a comment about how cool it was that his dad was going to be hanging out with Moses (and other believers from the Bible) some day soon! That IS so cool and what joy we have knowing that we will be with Dan again some day as well. The blessing of heaven is the only way we can find any comfort in the end of Dan's earthly life.

wii

We have had our wii for about a year now. We played it all the time when we first got it. Then it kind of sat there for awhile gathering dust. In the past couple of months we have started to enjoy it again. I especially like wii Fit Plus. I try to work out everyday and love the variety of activities. I usually run, ride bike, do some tae kwon do, hula hoop and box. There are also yoga and strength training exercises, but I am usually pressed for time so don't get to those.

K's favorite (and Mike's too) is wii Resort. They love to play ping pong! I like the sword fighting and wake boarding. :) There are so many fun games to play--it never gets boring!

Four and a half

K is very excited about the fact that today he turned 4-1/2 years old. :) He is taking a treat to preschool tomorrow since he has a summer bday. We took ice cream cones and filled them with popcorn, cheerios (regular and chocolate) and raisins. (I got the idea from a magazine.) Last night when he was having a fit Mike told him that 4-1/2 year olds do NOT act like that. K's tearful response was, "But Daddy I'm not 4-1/2 yet!" Ahhhhhhhhhhhhhh...

I'm still going strong with my exercise and eating well. Yesterday was rough due a potluck/grill-out at church. I could not resist eating one of the hot dogs Mike made and felt guilty all day, but in the past I would have had two hot dogs so I guess it wasn't so awful. According to the wii I have lost another 2 pounds so I'm happy with that! :) Searching for healthy, new recipes isn't as fun anymore though. I think I'm going to check the bookstores and library for some cookbooks.

MARCH FOR LIFE

Join me in the Virtual March for Life! How cool is this?? I am excited to join in and show that I am 100% PRO-LIFE! Let's be heard and stop the killing of innocent babies!

This reminds me of a time that I was able to be part of a pro-life gathering on this very day, many years ago. It was held at the Capital building in St. Paul. It was so amazing to see so many other people stand up and join together and support LIFE! I am strongly against abortion for any reason at all. Children are a blessing from God to be cherished and loved!

Goodbye sodium and fat!

Last week I went to the doctor for the first time in 4 years. I finally went in because I had been having difficulty getting a full breath at times and my heart just felt like it was pounding. I figured that since it had been about 7 years since I had had blood work done to check for cholesterol and diabetes it was now time!

The visit went well--the doctor was very nice. It was discovered that I have rather high blood pressure. High enough to warrant doctor's orders of 30 minutes of exercise a day, watch what I eat--less processed and canned foods, and basically lose some weight! Then they took some of my blood in order to check like a gazillion things. (I am NOT looking forward to the bill...) The lab work all came back great except for my cholesterol. The bad was a little high and the good was a little low. Again, exercise and healthy diet!

So began my lifestyle changes! I have busy been searching the internet for information regarding high blood pressure and sodium. I have found many, many awesome recipes that are healthy, low in sodium and fairly easy to make. I have been hiking and walking and regularly sweating due to wii Fit! I DO NOT want to go on blood pressure medication so I WILL follow my doctor's orders and get my weight down and make my diet more healthy. Actually, I have been doing a pretty good job of it--if I do say so myself! :) I'm not going to lie. I was quite the whiner the first day or two (and it's only been a week!). I love pizza and french fries and cake and tacos and... Apparently I have loved all those things a little too much! I am now much more aware of just how much sodium is in things--it is outrageous!! I am a label reader now. I have many more fresh fruits and veggies in my house. My snacks are low sodium and low fat. I eat with much more moderation than before. Surprisingly, it has gotten easier and I'm actually kind of enjoying searching for "homemade" ways to make things and try. I am not as tired and feel good about getting my body in shape. Mike has jumped on the bandwagon as well and keeps track of his daily calorie intake. He is such a great sport in trying new foods and recipes with me.

One week down and so far so good! According to the wii I've lost a few pounds already, but I'm not sure that is entirely accurate. I have prayed for God's help with this because food is, sadly, a big part of my life and now I have to make it less important. He is definitely helping me and I am so happy that already my attitude is changing and I'm looking forward to a healthier, shapelier me in the next year! :)

Peace

Ever since we got back from vacation I have been much more content and at peace with my life. I've been renewed in my desire to decorate and make my house a "home". I've been smiling more and looking ahead to the future. I guess I needed two weeks away from the "real world" and a chance to appreciate what I have here in Tucson. I'm very thankful we had the opportunity to get away and enjoy time with family and friends.

Making my house a "home"...
I am in the process (slowly!) of making our office into my "Paris" room. I LOVE Paris--mostly the Eiffel Tower. So, ever since I visited there I have been collecting pictures, candles, books with the Eiffel Tower on them. Now I am finally going to get them all displayed in the office. I HATE painting so I'm trying to just pain the trim and shelves a silver color, but we'll see if I like that or not. I may end up painting at least one wall in the white room.

I also picked out a wall color for the main bathroom and now just need to get motivated to paint. I don't do ladders so I'll need Mike to get the high spots. I'm sure one of my friends would come and over paint with me too. Maybe it's not painting that I hate so much, but all the prep and clean up. I just want to open the can, put the color on the wall and be done. :)

We decided to have a "cafe/coffee" them in our kitchen and have found a few wonderful wall hangings and vases at Kirklands. (If you've never been to Kirklands drop everything and go NOW! The place is amazing!!!) Mike was able to get all the of things hung up and our kitchen is really starting to look nice!

Looking ahead to the future...
They (school) have sent the Kindergarten letter home...I have to start thinking about sending my little boy off to school ALL day, EVERYDAY in just a few short months. I am excited for K because he is always asking when he can eat lunch at school and stay all day. He will do great and is very ready, for sure...BUT am I ready?? That opens up more of an opportunity for me to work more and I'm praying God would let me know what he wants me to do. I LOVE doing my transcribing and do not want to stop with that, but is there also something else I could be doing and still be available for my family and able to volunteer and go on field trips? It's exciting and scary all together as I think about changes that are coming...

Then there is the feeling we've been having lately--the feeling that maybe God is leading us to pursue another adoption. Honestly, the funds are quite low and I don't see how we could possibly afford another adoption, but God can do anything and I know if he wants us to do this he'll make it happen. So, we are going to meet with a social worker in the near future and learn more about domestic adoption. Another exciting, yet scary opportunity we will explore! (Prayers are greatly appreciated!!)

Books!

I love, love, love to read! There is nothing like getting taken in by a good book and forgetting everything else but the story you have been sucked into. I read all kinds of genres...mystery, historical fiction, romance, biographies, suspense...I love them all. So, I was very excited to find out I'd been chosen by houseparty.com to host another party and this time it is a party for Kristin Hannah's book "Firefly Lane". House Party sent me 12 copies of "Firefly Lane", two copies of "True Colors" and one early copy of Kristin's newest book coming out in February "Winter Garden". I have given friends copies of "Firefly Lane" to read and later in January we will meet at my house to discuss the book. The book is about two best friends and their journey through life. I'm planning an afternoon of comfort...slippers will be worn and we'll share favorite comfort foods and drinks while we talk about friendship. It should be lots of fun! (BTW, I already read "Firefly Lane" and while I was disappointed in the occasional bad language and promiscuous lifestyle of one character, the storyline was very good and I required many tissues at the end of the book.)
